Ingredients
1.5 tubs of Quark
(250g)
Stevia
Raspberries (or fruit of your choice)
4 eggs separated
1
teaspoons baking powder
Vanilla Essence (or any essence that you fancy really)
Pre Heat the oven to 180C
Pop your yolks and half a tub of Quark
in a bowl and mix, add the baking powder, 4 tablespoons of sweetener and the
essence to it and mix till smooth.
Whisk the egg whites until stiff. Whisk
half the egg whites in to the mixture, then fold in the other half.
You’ll have quite a wet mixture. Pour it
in to a swiss roll tin which has been lined with greaseproof paper and sprayed
with fry light.
Stick in the oven for around 20 minutes,
it will look as if it’s risen quite a lot but don’t worry it deflates! Let it
cool for a while then take out of the tray.
In a new
bowl, mix a tub of quark and sweetener till it meets your taste. Add some
essence if you want too. Spread the mix over the roulade when it’s cool. Add
fruit on the top, then roll the whole thing from one side to another.
